Ingredients:

2 apples, cut into small pieces
Quickly cook 2 cups rolled oats
1 cup of flour of your choice
1 teaspoon of baking soda
2 Tablespoons of raw sugar, coconut sugar or 2 tablespoons. Hot and easy to
spread honey
2 egg whites
1 ΒΌ cup milk (or soy / rice / coconut)
2 A teaspoon of extra virgin olive oil
a pinch of salt
For the berry garnish:
1 cup blackcurrant, washed and stemless
3 tablespoons of water (you can use less)
2 tablespoons of sugar (see above for types)

Directions:

Place the garnish ingredients on low heat in a saucepan and frequently stir for
about 10 minutes until cooked and the juices are released.
Take the dry ingredients and mix in a bowl. Then add the apples and process
them one by one (you can’t use everything) until they are well chopped. Beat
the egg whites well and mix gently in the pancake batter. Set aside in the
refrigerator.
Pour a quarter of the oil into a flat pan or frying pan and, when hot, pour the
batter into a pancake. If the pancakes have golden edges and form air
bubbles, they can be easily turned over.
Test if the bottom can move away from the pan before turning it over. Repeat
for the next three pancakes. Cover each pancake with berries.
